Salted Caramel Blondies

I feel like the blondie is kind of a neglected dessert.  Everyone wants chocolate.  Or cupcakes.  Or fancy cookies.  No one thinks about the lonely blondie.  Many don’t even know what a blondie is.  Tragedy, really. 

What? 

You’ve never heard of a blondie? 

Say it ain’t so!

oh, you poor, poor thing!  You’ve never had a blondie?

Well that’s it.  Stop what you’re doing right now and break out your grocery list.  Yes, right now.  I’ll wait.

 


Ok, list in hand? Because you have GOT to try these blondies right now.  Or as close to right now as humanly possible.  These were the most decadent, sinful thing I’ve ever eaten.  Like, eyes-roll-back-in-your-head kind of sinful.  Like, let’s-skip-dinner-and-just-eat-a-whole-day’s worth-of-calories-by-eating-nothing-but-a-whole-pan-of-blondies-in-one-sitting kind of sinful.  And let’s face it, we all need that kind of decadence in our lives once in a while.  It’s good for the soul. It’s like a brownie, but without the chocolate – which, in this non-chocolate lover’s opinion, makes them even better than a brownie.  Add some salted caramel (which is slowly becoming one of my favorite things in the world), and they become straight up to-die-for. 

When I was developing the Green Mile menu, I wanted something cheeky to go with “behind bars” – and what better than a Blondie Behind Bars?  In my search for a killer blondie recipe, I found Sing for Your Supper’s Salted Caramel Pumpkin Blondies.  Hello, yum!  But it’s spring, so I didn’t think the pumpkin really fit the season.  So I found a basic blondie recipe, added Amy’s salted caramel idea, and viola!  Blondies “Behind Bars” were born. 

Blondies Behind Bars (aka, Salted Caramel Blondies)

inspired by Sing for Your Supper

1 1/2 cups firmly packed light brown sugar
1 cup (2 sticks) unsalted butter, melted
2 1/4 cups all purpose flour
3/4 tsp baking soda
1 tsp salt, divided
2 large eggs
1 tsp vanilla extract
3/4 cup caramel sauce (homemade or store bought)

Preheat oven to 375.  Spray a glass 9×13 dish with cooking spray.

Pour sugar into a large bowl.  Add melted butter and stir until smooth.  Cool to room temperature. 

Whisk together flour, baking soda, and 1/2 tsp salt.  Set aside. 

Beat eggs and vanilla into the sugar/butter mixture.  Add the flour mixture a bit at a time and mix until a smooth, thick batter forms. 

Spread half the batter in the bottom of the baking dish.  Bake for 12-14 minutes, or until batter starts to firm.  Remove from oven.

Drizzle caramel sauce evenly over the top. Sprinkle other 1/2 tsp of salt over the top.  Carefully drop spoonfuls of remaining batter over the caramel, smoothing it out as best you can.  Top with an additional sprinkle of salt, if desired.  Return to oven, bake an additional 12-14 minutes.  Let cool before slicing and serving.
